Squash stuffed with red kidney beans and spinach.

A quick and filling meal you can either make as a side or a main dish.

Saute 1/2 a white onion in 2 tbsps of oil.

When the onion is translucent after about 3 - 5 minutes add mixed herbs (dried or fresh).

Mix well and let it cook for a further minute.

Add a handful of chopped spinach and cook until it wilts.

Add about 1/2 - 1 tsp of chillie flakes, ground cumin, salt and vegetable seasoning.

Mix in the spices and let it cook for about 5 minutes and add a can of drained red kidney beans.

Let it cook for about 5 minutes.

At this point you can taste and see if you would like to add more seasoning.

Add 2 tbsps of soy sauce, mix in well and remove from the heat.

Cook your squash in boiling water for about 30 minutes.

Once it has cooked thoroughly, set it aside to cool down.

Cut it in half, remove the seeds and top it with your beans and spinach.

You can add additional chillie flakes or fresh coriander.
